It is always a pleasure to take on something a bit unusual that takes me way out of my comfort zone, but this fantastic opportunity and experience has and continues to keep me excited. I am forever grateful and thankful to three very different and unique Chefs, Simon Rogan, Adam Handling and Kevin Tickle.
